The Ultimate Pumpkin cookbook was inspired by a casual conversation between a mother and her grown daughter in the kitchen together while preparing pumpkins for the freezer.   “Mommy, is there anything else you can make with pumpkins besides pies and jack-o-lanterns?”

Tracy died June 9, 1998, the following summer.  The author, Fran Horan was haunted by her daughter’s unanswered question that day and she began searching for other things to do with pumpkins besides making jack-o-lanterns and pies.  With the precious memory of her daughters voice reverberating in her heart, inspiration took control and The Ultimate Pumpkin was born.  The result was a collection of over 225 recipes and growing.

Almost every Cook has tried their hand at making a pumpkin pie. It's simple; just follow the directions on the back of the label on the can of pumpkin. As far as fresh pumpkins go, well you know those end up on the curb, where they worked their way from the front porch, and have melted wax candle inside.  If the pumpkin is lucky and has responsible owners, they proudly become Zoo food! I want to challenge you to step out of the ordinary and do something different. Be brave; make pumpkin soup!

Of course there are pumpkin pie recipes in my cookbook, lots of them in fact, but you will also find recipes for soup, muffins, bread, candy, cookies, and even pumpkin as a side dish. If you are really want to show some culinary skill, try serving pumpkin as a main dish. You can't create a more attractive dinner presentation than an oven baked pumpkin full of meat and rice, or soup served in a Pumpkin Tureen.

The recipes in this book come from all over the world. The foreign measurements have been carefully adjusted to American equivalents of the typical volume form of measurements such as cups, teaspoons and tablespoons. I could not have done this without out the help of my friends who learned to cook using measurements of weights. Thanks Sam and Raymond! Some of the directions have been rewritten and recipes in every category have been tested with the goal to make them easier to understand and accommodate cooks at any level of experience. I have also made an effort to keep the entire recipe on one page, however, there are a few that extend over to next page. It is always a good practice to read through a recipe thoroughly before beginning and mentally work your way through all of the procedures, while making sure you have all of the ingredients. Pumpkin is very versatile and there is a lot of room for substitutions as well as creativity.

I believe this to be a much needed and equally wanted cookbook with hopes that it helps reduce the waste of all of this beautiful fruit wasted every fall. Take advantage of this wonderful and delicious fall produce and turn that jack-o'-lantern frown into a smile while you bring out the gourmet cook in you.
